Halloween is soooo fun with kids! I think I enjoy it as much as they do. Last monday we went to the scarecrow festival at Thanksgiving Point. There was a haunted house (Roman takes after me he didn't like the Haunted House), trian rides, rock climbing and caramel apples.
On Friday night we went to "Magic in the dark" at the Red Butte Gardens. The kids had to follow the path of the garden and get their cards punched at each station in order to get a prize. On the way they had a maze, a magic show, and fun activities to do. I forgot Roman's Darth Vader mask as part of his costume, so he got upset when everyone thought he was Bat-man. (Ooops)

How fun - a recipe posting! Here's one of my favorite, easy appetizers for this time of year.
Pumpkin Dip
It’s not pretty, but oh, so good!
1 cup pumpkin puree (canned or fresh)
1 – 8 oz. block of cream cheese, softened
2/3 small container of cool whip
½ cup sugar
Dash of vanilla
Cinnamon and nutmeg to taste
Add all ingredients together and mix with hand mixer until fluffy. Great to make the night before. Serve with graham cracker sticks, fresh fruit, nut breads or whatever! All of these measurements are “estimates”, you don’t have to be exact. Tweak it however you like! You can tell yourself that it’s healthy because of the vitamins and fiber in the pumpkin, but I’m sure the sugar cancels it out.
